A favorite and simple salad of mine. Goes great as a side to a steak dinner or add grilled chicken to it as a main course!
This is a very good dish for an on the fly, super tasty side item for your lunch or dinner. The is low carb and high fat, perfect for keto diets and low carb restrictions. The proportions would make for 4 good meals and taste good regardless of being pre-made (Typically creamed spinach would not be good leftover...). I use the Trader Joes frozen spinach as it maintains consistency and is very cost effective. This dish does not require anything other than a microwave, so feel free to utilize this as an office ready dish that can be made virtually anywhere a fridge and microwave exist.
I usually pair this dish with a couple of fully cooked chicken sausages and you are good to go!
