White Bean, Goat Cheese and Sun-dried Tomato Salad

A favorite and simple salad of mine. Goes great as a side to a steak dinner or add grilled chicken to it as a main course!

  • Yields: 2-4 servings


11. It's a salad. Toss it!


Spinach, baby greens and/or kale

Crumbled goat cheese

3/4 cup (more or less), cooked white beans (Cannelini, Great Northern or Navy Beans)

1/4 cup (more or less), julienned sun-dred tomatoes.

Marinade from the sun-dried jar

Splash of balsamic vinegar

salt and peppar to taste
